Creamy Tomato Basil Pasta

• 200 g tagliatelle
• 400 g cherry tomatoes
• 100 g ricotta
• 2 cloves garlic
• 20 g parmesan
• 15 basil leaves

Directions

1. 1Roast the tomatoes and garlic at 200°C for 20 minutes until collapsing.
2. 2Blend or crush with the ricotta into a loose sauce.
3. 3Cook the pasta one minute under the package time, saving a mug of water.
4. 4Finish the pasta in the sauce with pasta water until glossy; add basil off heat.
